CHEF SERIES: Martin Morelli, The Diner Lennox

Bringing an authentic taste of Italia to the Northern Rivers is Martin Morelli (aka @morellifresh) of The Diner Lennox, with a menu rich in flavour, local produce, and fresh pasta (not to mention Salumi Australia).

“This dish is called Casoncelli alla Bergamasca,” says Martin Morelli. “It’s a super typical dish from Bergamo province, where I’m from. They are a kind of filled pasta, filled with fresh sausage, beef mince, pear, Amaretti biscuits, breadcrumbs, grana padano, and parsley.

“The sauce is made with burnt butter, crispy Salumi Australia pancetta affumicata and sage, with a heap of Grana Padano grated on the bottom of the plate, in between the pasta and the sauce.”
