Naturally cold smoking the semi-dried chorizo for 24 hours accentuates the smoky tone of the paprika and broadens the depth of flavour of any dish by its inclusion.

Lightly score and grill on medium-hot, serve individually, or add to a seafood paella or hearty stew and match with a traditional Tempranillo.
