At Salumi Australia we craft consciously cured meats and fermented small goods – known in Italy as salumi - beneath the green hills of the Byron Bay hinterland. In crafting our award winning salumi range, we have consciously returned to the traditional curing and fermentation techniques that our Italian ancestors developed centuries ago. Using slow food techniques and locally sourced ingredients wherever we can, we believe you really can taste the difference. We like to call it the new old flavour.

Salumi has been involved at heart and product with our Deli for 2 years now, sharing the large dry aged beef fridge space with whole sides of locally grown and aged beef. Our deli holds the entire range of Salumi products, prominently hanging in the full size window to greet you on arrival. Abundant local produce, seasonal excitement and diversity are what we showcase at Harvest and Salumi is the perfect fit to those philosophies.

I’ve known the Salumi team for 8 years now when they were in the hospitality game around the Northern Rivers. Before we knew it, they were out of the restaurant game and onto Salumi Australia. The products were popping up everywhere, including my menu, ”The Billinudgel tasting board”. The customer feedback has always been great and we’ve enjoyed many a wine and Salumi with Michael and Massimo in countless Byron @ Byron functions. The feeling of pride warms my heart every time I witness one of the many accolades achieved by Salumi Australia in their short existence from late 2010.
