DANIELA MAIORANO'S ULTIMATE PASTA DOUGH

INGREDIENTS
150g semolina
400g Tipo 00 flour
5 whole eggs
2 egg yolks

METHOD
  1. Create a well with the flour.
  2. In a separate bowl, whisk the eggs and yolks together.
  3. Slowly add the eggs a bit at a time into the well, using a fork to slowly move mix the wall of the flour into the egg mixture until a shaggy dough forms.
  4. Begin to knead the dough with your hands until it is nice and smooth.
  5. Allow to rest in the fridge for half an hour.
  6. Use either semolina or flour to dust the bench.
  7. With a sharp knife slice the pasta into thin slices to run through the pasta machine.
  8. Feed the pieces of dough through the pasta machine on the largest setting one at a time.
  9. Combine two pieces of dough together and feed through again, repeating until you have two or three long sheets of pasta.
  10. Reduce the setting on the pasta machine and feed the sheets through one at a time.
  11. Fold the sheets in half and feed through again.
  12. Reduce the setting again and repeat the above until the dough is smooth.
  13. Reduce the setting to desired pasta thickness and feed through one last time.
  14. Pasta dough is now ready to be shaped into whatever you desire.
