It’s getting hot in here! Despite summer nearing its end, temperatures are at an all time high here in the Northern Rivers. And with a sweaty and humid season comes plenty of mould when it comes to salumi.
But mould isn’t always a bad thing. We follow tradition at Salumi Australia and sell ours with the mould intact. This mould not only protects the meat, but helps to enhance the flavour.
At this time of year we even find a grey-green mould naturally growing on top of the white mould in the ageing rooms. It can have a strong scent when fresh out of the packaging, but left to air for a bit this will disappear.
You can also wash the mould off and leave the salami to dry - either way we promise the salami at this time of year is even more delicious.
